Hi there!

Welcome to my blog! I am a passionate plant-based animal lover on the journey to discovering how to be more Kind in my choices. This blog is the insight to my journey.

Overnight Oats

Overnight Oats

Overnight Oats are a really easy 911 Solution that takes minimal prep time, but will have high ROI when it saves you from running for breakfast junk food next morning.

You can make it as simple or as complicated as you like. Bottom line - all you need is some oats and some liquid to start with.

I encourage you to play around with different combinations and find the one that strikes a chord with you, depending on where your priorities are.

Personally, when picking ingredients I take the route of maximizing health benefits, while staying cost-conscious and making it taste good comes as close second.

I will share 2 of my favorite (for today) Overnight Oats options, both simple and healthy.

  • One - Berry Light Oats - is lighter on calories.
  • Another - Turmeric Spice Oats - will be more nutritionally dense and slightly more filling.

Let's begin!

You will need containers with good lids, so when you grab it in the morning still half-asleep the chances of you ruining your bag or your outfit will significantly decrease.

I use mason jars. They are pretty cheap and convenient. I also heard people use old nut butter jars, but I have not tried it yet. Will let you know once I do!

PREP TIP: You can measure out your dry ingredients in advance and store in jars for the week. That way you can just pour liquid or add fruit in the evening when you are planning your breakfast for next day. All about efficiency.

So what goes in the jar?

Berry Light Oats

  • 1/3 cup of dry oats
  • 2 tbsp chia seeds
  • 5-7 medium frozen* strawberries
  • 1/3 cup frozen* blueberries
  • 1-1,5 cup vanilla soy milk

*You can also use fresh berries if you like. I use frozen because they are cheaper and I always have them on hand.

Directions:

  1. Add oats and chia seeds in a jar.
  2. Add strawberries, making sure to leave enough space for blueberries. Add frozen blueberries.
  3. Pour soy milk and gently shake. You want to make sure oats and chia seeds are evenly spread between berries and covered with soy milk. Both oats and chia seed (especially chia seeds) will absorb liquid and swell up, so they will need space for that.
  4. Cover the mixture with the lid and put it in the fridge.
  5. GO TO SLEEP! :)

In the morning just grab the jar and get ready to take over the world!

I usually just eat mine from the jar since I mostly make these for work. But if I am at home I may put the oats in the bowl and top off with some more berries or any other fun stuff that sounds good at the moment. You can also warm them up if that is your preference.

Turmeric Spice Oats

  • 1/2 dry oats
  • 2 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1-1,5 cup vanilla soy milk
  • 1/2 banana (add to the jar or use as a topping)

Directions:

  1. Combine dry ingredients: add oats, chia seeds, pumpkin seeds, turmeric and cinnamon in a jar. You can always make a few "dry jars" in advance and set them aside for later in the week.
  2. If you like to have banana already mixed in with oats in the morning - chop it up and add to the jar. Personally, I like to add mine as a topping when I eat the oats.
  3. Pour soy milk and gently shake. You want to make sure oats and chia seeds are evenly spread and covered with soy milk.
  4. Cover the mixture with the lid and put it in the fridge for the night.

I have been using the organic vanilla soy milk and it presents a perfect amount of sweetness for me. But you don't have to use soy milk of course. You can use any other nut milk or water, depending on your taste buds.

There are thousands of possible combinations for the Overnight Oats so don't shy away from being creative and utilizing what good (plant-based) stuff is laying around in your pantry!

Hope you are ready to win the day!

Love, Krystyna
