Cereal. Kind of

Grains are GREAT!

But as the story usually goes, the less processed they are the better.

Here is my take on a cereal (kind of) that is as whole grain as it gets. It is one of my favorite recently discovered flavor combinations and has nothing but goodness in it! And its is SUPER easy to make.

Ingredients:

  • 1/2 cup quinoa (cooked)
  • 1 fresh mango
  • 1/3 cup sliced almonds
  • 1/4 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/2 cup blueberries (optional)

*I list the proportions that I used when I took these photos. I found this portion size is perfect for me, but feel free to switch it up!

Directions:

1. Make quinoa.

I usually make a batch (2-3 cups) of quinoa in advance and just store it in a container in the fridge for when I need to add it to anything I make. I make mine in a pressure cooker. But you can also just use the regular stove, bringing to boil and letting simmer for 10-15 minutes or until ready.

2. Combine quinoa with spices.

If I am at home, I like to warm up my quinoa before making this "cereal". If I just cooked it and it is still warm - perfect. Otherwise I just throw it in a microwave for 30-60 seconds.

Add spice - turmeric, cinnamon, maybe some nutmeg - and mix well.

3. Bring on the fruit! Finally, slice up and add mangos, sliced almonds, blueberries if you like. I just used frozen blueberries.

4. Mix it all up and enjoy!

5. What happened to milk? If you feel like it you can add some soy or almond milk. I rarely do: mangoes are usually juicy enough to make up for a nice texture of the whole combination.

This makes for a nice breakfast, afternoon snack or a recovery meal after some strenuous activity. Loaded with protein, fiber, antioxidants, cancer fighting nutrients, iron and vitamin C (to name just a few) it is simply delicious, easy to make and will make you soul a happy one.
